A wonderful way to start this cooking adventure is with a meal with Thorin Oakenshield.
Be bold and answer the door.
Beef and Guinness Stew
(meat + alcohol – what more could a dwarf want!?)
2Tbl plain flour
800g beef blade or stewing steak cut into 3 cm pieces
olive oil
2 celery stalks chopped
1 onion chopped
2 carrots chopped
200g swiss brown mushrooms chopped
2 Tbl tomato paste
1 ½ cups Guinness
2 cups beef stock
2 bay leaves
parsley to serve
*I also add a sm Tbl of Vegemite, but I know not everyone is a fan!
Place flour in a bowl and season. Add beef and toss to coat.
Heat a good splash of oil in a saucepan and cook beef in batches until browned. Transfer to a plate.
Add vegetables (you may need a little more oil) and saute until tender (about 5 mins). Add tomato paste (and Vegemite if using) and stir in well.
Gradually stir in Guinness and stock. Add bay leaves, meat and juices from plate. Bring to the boil then cover and reduce to a slow simmer for 1 to 1 ½ hours. Remove lid and simmer for a further 30 mins.
Remove bay leaves and serve sprinkled with parsley. I serve with mashed potato or crusty bread.
Note: Can be done in a casserole dish in oven for 1 ½ to 2 hours or can also be done in a slow cooker – brown meat then put all ingredients into cooker (reduce the Guinness to 1 cup and the stock to ¾ cup). Cook for 6-8 hours on low.
A perfect, hearty meal before an Unexpected Journey 🙂
Recipe and photographs submitted by the lovely @lady0akenshield, who opened the door to Thorin on Boxing Day and hasn’t stopped loving this journey.
Cheers & Guinness,

Open the door … Richard. This sounds great and just what a dwarf prince needs after losing his way twice.

Sounds absolutely yummy! But then I do like a stew with Guinness. 😀
Yummy! Although I don’t eat meat, I can appreciate that a dwarf like Thorin would need a good ol’ dose of protein, much required to befriend a Hobbit, fight a dragon, and lose you’re marbles due to greed. Only suggestion- serve dish in an oaken bowl that you can later use it to shield yourself from a crazed Albino sitting on a peeved-off overgrown chihuahua 🙂
LOL great suggestion. You can use it to eat AND as a shield. Smart girl!
A BEEFFFFFFF recipe right off the bat!!! I love it and you rock CG!!!!! One question tho. Not being real educated on boozy related subjects…is the Guiness liquor? Waiting for your answer to I can sneak into the local liquor store. 😉
I believe Guinness is a beer! 🙂
Guinness is more like stout – has a very strong taste and is quite heavy, I don’t like it as a drink but I know plenty of people who do!
Sadly I don’t really know the difference between stout and beer. I know here is a whole science and art to it though!
Thanks gals. Headed to the big city tomorrow and will see if I can find some. Discretely of course. Baptist deacon’s wife has to be careful!! 🙂
I love beer, but I don’t care for Guinness on its own. It’s important to drink it at the right temperature (warmer than American lager) to get the real taste. However — it is fantastic when blended with vanilla ice cream, as a shake.
I’ve never tried it but that sounds good!
Lol! Well if you get caught tell them it’s for a recipe! 🙂
LOL…thinking of myself as one of the Baldwin sisters on The Waltons!! Remember their Papa’s recipe?!
I’m hungry. Dang you, Thorin and your stew! 🙂
This looks like good food for a dwarf. That’s why it’s funny that he only ate some spoons of soup in the hobbit, maybe he was too majestic to eat like the others. And Dwalin took al the cookies.
Mmm, this sounds great!
I don’t drink alcohol and yet this sound very good…or maybe it’s the thought of a drowsy, malleable Dwarf King that makes it so tempting…what was I saying? Ah, yes, Happy Birthday to me, and thank you for the fantasy fodder! *cough* [Goes away to ‘repent’ of her dignity stripping mischief]
Sounds delicious! 🙂 Where I live people put stew over rice. But personally, I just eat stew without anything under it.
Oh, I love Guinness! mmmmmmmmmmm… Well, back to the subject, thanks for the recipe. I actually made a similar one … not honoring Richard, I must confess, but my favorite pop group 😀
I am vegan so Thorin and I would not get a;long. I wonder how he would react if I made him a chickpea and avocado sandwich.
Hmmmm. I don’t think Thorin would be in to chick peas somehow. Perhaps if they were made into a meat shaped food he may try it but I have a feeling he would just get grumpy (but boy does he do grumpy well!)
Making this one tonight! 🙂
Oh cool! Let us know how it turns out!
I leave out celery AND Vegemite lol 😉
